Little fried fishes
Fried local anchovies (big for anchovies, little for other fish) with cornmeal crust dusted with paprika. Served with a classic aioli.
These were everywhere in Croatia, not so much here - so they had to be recreated. Cleaning them can be a chore, but the rest of the prep is easy, the anchovies are cheap, green, over-the-top healthy, and the outcome is more than worth the effort.
